We had a fast and furious weekend and I really wish there was one more day to it. The weekend was a blast but I’m still tired. The bad thing is I’m sitting here thinking of all the things I need to do this week. My house needs cleaning, I have weeds taking over my flower bed and I have a mountain of laundry. No rest for the weary this week. I’m determined to get it all done gracefully, though.
This weeks plan is an easy one. I really didn’t want to do anything fancy with all the other things I need to do.
Here’s the plan.
Tonight: melt in your mouth pancakes, eggs and bacon
Tuesday: pork chops with potato cakes
Wednesday: grilled cheese sandwiches
Thursday: take out after praise and worship practice
Friday: date night!

Well, our house experienced it’s first rush of house guests this weekend and it survived. I think it’s a keeper. We had my father-in-law Joe’s youth group staying here all weekend and it was a lot of fun. It was a blast meeting new people and showing off our new house. Saturday morning I got brave and decided I wanted made cinnamon rolls for the first time. They turned out really tasty. I think I’m going to make them one more time before I post the recipe and the pics to make sure everything is perfect.
I think this should be a pretty calm week for a change. We definitely need it. I picked up a new stir fry cookbook from Sams last time I was there, so we are going to try one of the recipes from it. If it is good I’ll post the recipe Wednesday. I absolutely LOVE stir frys. They are so tasty and healthy.

I just realized this is my 201st blog post. I had big plans to do a sweet, meaningful 200th blog post filled with loving comments that will make even the hardest person cry, but no. I had to post about burritos. Oh well, maybe I’ll pay more attention later and make 300 a big one. Or not.
Anyway, this weeks going to be crazy. First, the best friend and co-worker had to get all loving youth pastor’s wife on me and take a bunch of teenagers to Detroit to follow their dreams, and leave me at work. Second, my youth pastor father-in-law decided to drive all the way here from Florida to come to Rock the Desert. Yup, they are coming here to the desert to a Christian music festival when they could probably see all the same bands there in Florida, possibly on the beach. Makes sense huh? Love ya Joe! So, the meal plan will probably be a little wonky this week due to all of the crazy youth pastors in our life.

Tonight: chicken pasta in a veal cream sauce
Tuesday: Steak and lemon rice
Wednesday: not a clue
Thursday: don’t know that either
Friday: who knows

We had a fantastic weekend. Saturday was my birthday so I threw the diet out the window and had a weekend full of cupcakes and AMAZING food. We went to Shoguns Saturday night, and they gave us so much food that we can make another meal out of it. So tonight we are throwing all the leftovers in the wok with some extra chicken.
This week I have to be extra good since I ate so much over the weekend. I know you are going to take one look at my meal plan and go, “that’s not healthy!” but I’ll be having very small portions with mostly salad. That way I will still get to taste the good food but I’m not going to eat a lot of it. There is nothing like a bikini in the near future to motivate you to eat well!

Tonight: Leftover Shoguns with some extra chicken
Tuesday: mini meatball sandwiches with baked beans and salad
Wednesday: Chili dogs and chips
Thursday: take out after practice

We had a great weekend! Friday evening we went to the Quarterlife BBQ and it was a blast. My cheeks still hurt from laughing so much. Thank you Chad and Amanda for opening up your home to all of us.
We also put together several book shelves that we got at IKEA. I think we only have one more to go. The process seems never ending, but the ones we have up look great.
This weeks meal plan is a good one!
Tonight: fried chicken, mashed potatoes and corn on the cobb (yes, fried food)
Tuesday: pork chops and mashed sweet potatoes
Wednesday: burritos on the go (leftover meat from previous days with peppers and onions)
Thursday: Not sure yet…I’m going to try to throw something together after praise and worship practice
Friday: date night
Saturday: my birthday dinner at Shoguns!!!!
