Weekly meal plan 5.31.10

Well, for those who don’t know, last Friday Jace and I became homeowners for the first time. We are VERY excited, and we are in the process of moving in right now. I will do a post in the next couple of days with all the photos so everyone can see our beautiful new home.

This week’s meal plan is a little different due to Memorial day and unpacking but I am still going to be cooking almost every night. It saves us so much money and it is also much healthier than fast food. The more I read about the complete unhealthiness of fast food the more I want to cook. That doesn’t mean we don’t do any take out, but we just try to keep it to once or twice a week.

Here’s the plan.
Tonight: date night!
Tuesday: sauteed chicken and rice
Wednesday: grilled cheese sandwiches and sweet potato fries
Thursday: take out after praise and worship practice
Friday: Steak, mashed potatoes and corn on the cobb

We are back at Monday and it is complete chaos around our house. Boxes everywhere and there is no organization whatsoever (hint, hint). My organizational OCD is on overload right now and I think my brain may explode at any minute. Other than that everything is great!

We are taking turns cooking this week. You can tell who’s making what by just reading the plan. Naturally, my dish is the easy quesadillas and Jace’s is the harder looking one. I’m ok with that though, I’m just happy he’s willing to cook for me and he’s great at it.

Here’s this weeks meal plan.
Tonight: grilled chicken and pineapple quesadillas
Tuesday: chicken paella
Wednesday: probably leftovers
Thursday: take out after practice
Friday: date night!

I don’t have much of a meal plan this week because we are cramming a million and one things into the next two weeks. Despite the stress though, we will be making Jambalaya again and I will definitely put the recipe up. It was a big hit last time we made it, and we had tons of leftovers that were even better a couple days later. Here’s the plan.

Tonight: slow cooker drip beef sandwiches
Tuesday: Jambalaya
Wednesday: dinner at the church
Thursday: take out after practice
Friday: date night!

Did anyone else’s weekend go entirely too fast? I could swear that I went to sleep on Friday night and woke up this morning. Even though it was very short we had a good weekend and got quite a bit done around the house.

Due to the addition of a couple of pounds, I will be attempting to eat healthy this week. It’s not fun but necessary. I’ll be eating lots of veggies with my meals along with smaller meat and starch portions. Also I’m going to try to be more strict on what I’m eating during the day. Here’s my plan.

Tonight: sautéed chicken with mashed potatoes and corn
Tuesday: beef fajitas with refried beans and rice
Wednesday: nachos made with leftover fajitas
Thursday: take out before practice
Friday: date night!

Weekly meal plan 5.3.10

I want to thank everyone who prayed for Jace’s grandma last week. She’s not out of the woods yet, but she’s doing much better.
It is getting very exciting around the Gregg household. I’ll share details later but you will definitely want to keep checking in this month. It will be very eventful!
This week Jace will most likely be doing another post on his “different” ingredient, veal stock, and I will post our recipe for 5 spice beef stir fry. Both recipes this week are some of my favorite meals we make and they are very easy.

Here’s the plan.
Tonight: chicken pasta in a veal cream sauce
Tuesday: 5 spice beef stir fry
Wednesday: breakfast for dinner
Thursday: take out before praise and worship practice
Friday: game night
