Countdown to Thanksgiving!

Here we are a week away from Thanksgiving! I hope you all are getting your meal plans together. I know I am! More on that later. I wanted to repost some of last years Thanksgiving recipes to give you some help in planning your Thanksgiving feast. Just click on the photo titles and that will take you to the recipes. Enjoy!

Tonight: slow cooker pulled pork sandwiches (we didn’t eat them last week) with baked sweet potato fries.
Tuesday: brined and roasted whole chicken with scalloped potatoes and green beans
Wednesday: maybe a casserole that I can throw in the oven while I’m at work
Thursday: take out after praise and worship practice
Friday: date night

Croutons

Lately, I have been on another healthy eating kick and have been trying to include a lot more salad in my diet. The only way I can eat salad though, is if I fill it full of bright veggies and LOTS of croutons. Making your own croutons makes eating salad a lot more delicious and fancy. They also taste so much better than the store bought ones, and you have control of exactly how they are made and seasoned. They are also great with some ranch dressing!



Croutons

1 loaf of day old french bread (or anything type of bread you have on hand)
3 tablespoons of melted butter
a handful of herbs (I like rosemary but any will be great)
a pinch of salt
garlic powder

Cut the bread into small cubes and put them into a bowl. Pour the melted butter over the top, sprinkle the herbs salt and some garlic powder over them. Stir well with a spoon and pour them onto a greased baking sheet.

Bake for about 15 minutes or until brown. Keep an eye on them because they can go from brown to burnt in seconds.

Let them cool and store in an airtight container.

Tonight: Braised chicken thighs with mushrooms and golden raisins in a white wine sauce. Salty baby potatoes on the side.
Tuesday: Momofuku (I promise I’m not cursing) steak stir fry with squash, zucchini, onions, mushrooms and noodles
Wednesday: slow cooker pulled pork sandwiches with chips
Thursday: take out after praise and worship practice
Friday: date night
